Rice with peas, salmon and green beans
Ingredients for 4 people

250 g di Flora Il Classico rice
450 g di salmon fillet
100 g di fresh spring onion
10 cherry tomatoes
200 g green beans
1 kg fresh peas
Basil leaves to taste
Evo oil
Salt to taste
Pepper to taste

PREPARATION

Cook the rice in salted boiling water. Drain and let cool under running water. Meanwhile, grease a grill or a baking pan with oil. Place the fish fillets and cook. Meanwhile, clean the peas and put them in a bowl, then take the spring onion and divide it in half. In a pan with oil, pour the just sliced spring onion. As soon as it has wilted, add the fresh peas with salt and pepper and cook for about 10 minutes.
Wash the cherry tomatoes and cut them in two. Then clean the green beans and boil them in salted boiling water for 15-20 minutes. Once ready, season with extra virgin olive oil, salt and pepper. Take a large bowl and fill it with rice and a tablespoon of oil. Add salmon fillet and vegetables. Garnish with basil leaves and serve!
