Rice pancakes with red fruits and apples
Ingredients for 4 people (about 20 pancakes)

300 g boiled Flora Il Classico rice
60 g dried red fruits
60 g 00 flour
30 g sugar
1 small red apple
2 small eggs
1 pinch of cinnamon powder
frying vegetable oil
powdered sugar to taste

PREPARATION

Start by boiling 300 gr of Flora Il Classico rice. Meanwhile, soak the fruits in a bit of warm water and cut the apple into cubes of about 1 cm. Place the boiled rice in a large bowl, add the eggs, flour, cinnamon, sugar, red fruits (drained) and apple pieces.

Mix the ingredients well until the mixture is soft but compact. Cover and let it rest for at least half an hour in a cool place. Make pancakes with a spoon and fry them in a large pan with plenty of hot oil. Sprinkle the rice pancakes with icing sugar and serve warm or lukewarm.
