Rice pancakes with raisins and lemon zest
Ingredients for 3/4 people

300 g of Flora Il Classico rice
80 g of raisins
60 g of 00 flour
30 g sugar
2 eggs
1 large pinch of cinnamon
Lemon zest
Peanut seed oil

PREPARATION

The perfect recipe to delight all dads!

To prepare rice pancakes with raisins and lemon zest (also called St. Joseph pancakes) first boil 300 g of Flora Il Classico Rice. Once cooked, drain and place in a large bowl.

Now add the other ingredients: the two eggs, flour, sugar, the grated zest of a lemon, a pinch of cinnamon powder, and finally the previously soaked raisins.

Mix the ingredients well until the mixture is soft but firm. Cover and let rest in a cool place for at least half an hour.

Place a frying pan with peanut oil on the stove, and when it is hot (not boiling), dip the resulting mixture with the help of a tablespoon so that it forms pancakes that should brown on both sides.

When the pancakes are browned to the right color, remove them with the help of a skimmer and roll them in granulated sugar.

Serve the rice pancakes still warm, garnish with lemon zest, and you have a yummy treat all ready!
