Vegan rice tajine
Ingredients for 4 people

280 g Flora Wholemeal rice
150 g cherry tomatoes
2 zucchini
2 peppers
2 medium-sized eggplants
4 dates
turmeric to taste
cumin to taste
1 garlic clove
evo oil
salt to taste
pepper to taste

PREPARATION

Start by cooking Flora Wholemeal rice in plenty salted water, drain and set aside.

In a large pan, sauté the garlic with a little bit of oil.

When it is golden, remove it from the pan and add previously diced zucchini, peppers and eggplant. Fry the vegetables for a few minutes in a pan and add the tomatoes cut in half. Add salt and pepper and cook over medium heat with the lid until the vegetables are soft. If the vegetables are too dry during cooking, add a little bit of hot water.

In another pan pour a little bit of oil and add the turmeric and cumin. Pour the rice and let it flavor with spice oil.

When the rice is well colored, place it on the bottom of a tajine and pour over the vegetables when they are still hot.

Before serving, chop the dates and garnish the tajine.
