Rice salad with red lentils and herbs
Ingredients for 3/4 people

320 g Flora Bell’Insalata rice
1 bunch of chard and stick
200 g steamed lentils
½ golden onion
Vegetable broth and EVO oil to taste.

PREPARATION

We recommend a recipe suitable for everyone, where rice is combined with aromatic flavors.

To prepare rice with red lentils and herbs, put a drizzle of oil and the chopped half onion in a pan, brown lightly over low heat. Then add Flora Bell’Insalata rice and toast it for a couple of minutes and after that pour in the hot vegetable broth to cook it. Slowly pour in the broth, each time it dries up until the rice is almost cooked.

About 5 minutes from the end of cooking time add the lentils and the green part of the ribs that you cooked in a little water earlier for 4 minutes and cut into small pieces. Mix everything together and stir gently.

Let the rice cook just long enough to bring it to boil, if needed add another ladleful of broth. Turn off the heat and serve. The rice should be neither too watery nor too dry. Garnish with a few thyme leaves and serve cold.
