Risotto with mascarpone cheese, lime and pink pepper
Per uno stampo da 24 cm:

PREPARATION

To prepare Risotto with mascarpone, lime and pink pepper first peel the onion and chop it finely.
Put two tablespoons of extra virgin olive oil and heat it, add the onion and let it brown. Add the Curtiriso Carnaroli Rice and let it toast, let it simmer with white wine and stir.
Start adding ladles of vegetable stock and almost at the end of the cooking time add the mascarpone, the juice and lime zest. Stir and also add a generous handful of Parmesan cheese.
Plate the risotto and add lime zest and slice and pink pepper.
Enjoy the Mascarpone Risotto with lime and pink pepper immediately.
